Asian Crispy Salad

Preparation:   15 minutes

Cooking:   5 minutes

Serves 4

4 rashers bacon

½ Chinese cabbage, finely shredded

½ packet sunflower seeds

½ packet almonds, blanched and toasted

5 spring onions, chopped

4 sticks celery, chopped

½ packet crispy fried noodles

 

Dressing

½ cup olive oil

¼ cup white vinegar

¼ cup brown sugar

1 tspn soy sauce

 

Grill bacon. Cut into small strips. Place all salad ingredients except noodles in a serving bowl. Toss to combine. To make dressing, place ingredients into a jar with a lid. Shake well. Pour dressing over salad and sprinkle with noodles just prior to serving.
