Avocado Mango and Prawn Salad

Cooking time: 5 minutes
Serves 4
Lettuce, leaves washed and torn
2 avocados, peeled and diced
1 mango, peeled and
diced
16 prawns, cooked
and peeled
½ cup walnuts,
roughly chopped
Dressing
¼ cup Italian dressing
2 tblspn lemon juice
1 tspn wholegrain mustard
Combine dressing ingredients in a small bowl and mix well. Arrange
lettuce, avocados, mango, prawns and walnuts in a large serving bowl. Drizzle
over dressing and serve with plenty of fresh crusty bread.
