Beef Stroganoff
Preparation: 10 minutes
Cooking: 20 minutes
Serves 4
2 tblspn oil
500 g beef strips
1 onion, chopped
500 g flat mushrooms, sliced
1/2 cup beef stock
2 tblspn tomato paste
Salt and freshly ground black pepper, to taste
300 ml sour light cream
Mashed Ruby Lou or Royal Blue potato, to serve
Chopped fresh parsley
Heat half the oil in a large frying pan. Cook meat quickly in
batches until just
brown. Remove from pan. Heat
remaining oil. Cook onion until
golden. Add
mushrooms,
stock and tomato paste. Cook 5 minutes. Add meat. Cook gently
until
meat is tender. Add salt and
pepper. Fold in sour light cream just
before
serving.
Serve with mashed potato and plenty of chopped parsley.
