Serves 2-4
4 thick slices of good quality fruit loaf
1/2 cup fresh ricotta cheese
1/2 tspn lemon zest
1 tspn honey
1 punnet strawberries, washed, hulled, halved
1 punnet blueberries, washed
Chocolate sauce to serve
Mint leaves to garnish
Lightly toast fruit loaf.
Place on individual serving plates.
Combine ricotta cheese,
lemon zest and
honey. Divide the mixture evenly between
the four slices of fruit
loaf. Top slices with the mixture. Place
strawberries and blueberries on top of
slices. Drizzle with a little chocolate sauce. Garnish with mint leaves. Serve
immediately with more ricotta mixture if desired.
