Cajun Fish
Preparation: 10 minutes
Cooking: 5 minutes
Serves 4
4 fish fillets
¼ cup plain flour
1 egg, lightly whisked
½ cup Cajun flavoured breadcrumbs
1 tblspn olive oil
Coat fillets in flour,
then egg, then breadcrumbs. Heat oil in a pan over medium
heat. Cook for 2 minutes each side. Serve with creamy mashed potatoes
and steamed vegetables.
