Cauliflower and Bacon Soup

Serves 4
4 rashers bacon, trimmed and chopped
1 sprig fresh coriander, chopped
5 cups vegetable stock
1 brown onion, chopped
1 clove garlic, crushed
1/2 cauliflower, cut into small florets
1 cup natural yoghurt
1 tspn cumin
Fresh herbs to garnish
Cheese scrolls, to serve
Heat pan. Add bacon. Sauté for 5 minutes or until browned. Put a
few pieces of bacon aside for garnish. Add coriander. Cook,
stirring for 1 minute. Add stock, onion and
garlic. Bring to boil. Reduce heat and
simmer
for 5 mins. Add cauliflower. Cook until cauliflower is tender. Meanwhile,
mix 1/3
cup yoghurt with the cumin. Process soup until smooth. Stir in remaining
yoghurt.
Serve in warm soup bowls with a dollop of the yoghurt mixture, bacon bits,fresh herbs and crusty bread.
