Cherry and Coconut Muffins

Makes: 12
2 cups SR flour
125g butter
1 cup coconut
1 cup fresh or canned pitted cherries
2/3 cup castor sugar
1 cup coconut milk
1 beaten egg
1 - 2 tblspn milk

Combine flour and butter in food processor until mixture resembles
breadcrumbs.
Place all
ingredients into large bowl.
Mix
gently until just combined. Place mixture into greased 12 hole
muffin tin.
Bake at
220 C for 20 minutes.
