Chicken and Bacon Shish Kebabs
Preparation: 15 minutes + marinating
Cooking: 20 minutes
Serves 4
1 kg chicken
breasts
1 tblspn olive oil
½ lemon, juiced
Salt and freshly ground black pepper
1 medium onion, sliced
3 medium tomatoes, sliced
Bay leaves
6 rashers bacon, cut into large squares
1 green
capsicum, cut into large squares
1 eggplant, cut into large squares
Cut the chicken into 1 inch cubes. Mix olive oil and lemon juice and rub into
chicken. Place in a dish and sprinkle with salt and pepper. Cover with onion
and tomatoes slices and a few bay leaves. Place in refrigerator for 4 - 5
hours. Arrange chicken and bacon on skewers alternating with tomatoes, onions,
capsicum and eggplant. Add an occasional bay leaf. Cook over an open wood fire
or in an oven. Serve immediately.
