garlic, crushed

tomatoes, chopped

1 red
chilli, finely chopped

cooked diced Ruby Lou potatoes
425 g
can red kidney beans, drained

light cream

onions, to garnish

corn chips, to serve
Heat
oil in a saucepan. Cook mince, onion and garlic. Sauté until onion is soft and
mince is well browned. Mix in tomatoes, water, tomato paste and chilli. Bring
to the boil. Reduce heat. Simmer for 20 minutes. Add potatoes and kidney beans.
Warm through. Divide into serving bowls. Top with sour cream and chopped spring
onions. Serve with warm corn chips.
