Chocolate and
Orange Cake

2 navel
oranges
200 g
dark chocolate, chopped
100 g
butter
8 eggs
300 g
caster sugar
300 g
almond meal
Place oranges
in a saucepan. Cover with water and a lid. Bring to the boil. Reduce to low
heat. Cook for 30 minutes. Remove oranges and set aside to cool. Roughly chop
and place in a food processor. Process until a coarse paste
forms. Melt chocolate and butter in a heatproof bowl over a saucepan of
simmering water, stirring until smooth. Set aside to cool. Preheat oven to
180°C. Line a 22cm cake tin with baking paper. Beat
eggs and sugar together in a large bowl until well combined. Fold in almond
meal, orange paste and chocolate mixture until well combined. Pour into cake
tin. Bake for 1 hour 25 or until cooked. Allow to cool
in the pan. Dust with icing sugar and serve with cream or ice cream.
