Dark Chocolate Truffles

Makes 40

300g dark chocolate buttons
2 1/2 tblspn cream
125g butter
1/2 cup almond meal
1/2 medium potato, cooked, mashed
3/4 cup coconut
2 1/2 tblspn Drambui or any liqueur
100g dark chocolate buttons, extra
Place a bowl over a saucepan of boiling water. Do not allow the
bowl to touch the water.
Add
chocolate buttons, cream and butter.
Stir
until the mixture has evenly melted. Remove from the heat. In a separate
bowl, mix
the almond meal, mashed potato, coconut and liqueur. Combine both mixtures, mix
gently. Refrigerate until set. Roll mixture into small balls and place into
freezer for 10 minutes. Melt extra chocolate as before. Set aside for five minutes.
Dip each truffle into the chocolate to coat. Place onto a tray. Refrigerate for
15 minutes.
