Devine Mandarin and
A very special citrus cake, which could be enjoyed at any of the
best cafes
Preparation: 15 minutes
Cooking: boil oranges for 2 hours, bake cake for 1 hour
Serves: 6-8
150g ground almonds
2 large oranges
6 eggs, beaten
250g white sugar
1 tspn baking powder
1 orange, peeled and segmented (extra)
1 mandarin, peeled and segmented (extra)
Preheat oven to 190ºC and grease a springform tin.
Boil
oranges covered in a little water for 2 hours. Allow to cool slightly. Cut
oranges
open and remove pips, cut roughly.
Blend
oranges and all remaining ingredients together in a food processor. Pour batter
into prepared cake tin. Bake for approximately 1 hour. Allow to cool in tin before
turning out.
Serve
with an orange or mandarin segments and plenty of thick cream.
