Easy Apple and Rhubarb Crumble

Serves 6

1 kg Granny Smith apples, peeled, cored and diced

2 sticks of rhubarb, trimmed and finely sliced

1 lemon, juice and grated rind

2 tspn cinnamon

1 cup rolled oats

2 tblspn desiccated coconut

2 tblspn unprocessed bran

1 tblspn chopped almonds

1 tblspn butter

 

Alternately layer apple and rhubarb slices in an ovenproof dish and sprinkle with lemon juice, half the lemon rind and one teaspoon of cinnamon. Combine all remaining ingredients and mix until crumbly. Sprinkle topping over apples and rhubarb. Bake at 200ºC for 20 minutes or until crumble has browned. Serve hot or cold topped with low-fat yogurt.
