Easy Potato and Ham Pizza

Serves 4
2 Royal Blue potatoes
2 tblspn tomato paste
100 g ricotta cheese
2 tblspn grated parmesan cheese
½ capsicum, diced
1 cup diced ham
½ cup pineapple pieces
½ cup sliced mushrooms
1 cup grated low-fat cheddar cheese
1 tspn chopped fresh basil
1 tspn chopped fresh oregano

Wash potatoes but do not peel. Prick with a
fork. Microwave on HIGH for 7
minutes to soften. Slice lengthwise 0.5cm thick. Arrange in a single layer on a
plate. Spread tomato paste over sliced potato. Top
with ricotta cheese, parmesan,
capsicum, ham, pineapple, mushrooms, cheese and
herbs. Microwave on high for
4-5 minutes to melt other ingredients. Serve immediately.
