Grilled Chicken Salad with Grape and Walnut
Preparation: 15 minutes
Cooking: 10 minutes
Serves 4
Oil spray
500 g skinless chicken breast, sliced
½ cabbage, shredded
½ zucchini, grated
3 tblspn tartare sauce
½ red onion, finely sliced
1 ½ cups seedless red grapes
½ cup grated smoked cheese
½ cup walnuts, slightly crushed
Spray a non-stick pan with oil spray. Grill chicken for 5 minutes each side or
until golden and cooked through. Combine cabbage, zucchini and tartare sauce.
Fold in red onion and grapes. Divide cabbage mixture onto serving plates.
Arrange chicken over the top. Add some grated cheese into the centre of each
salad and sprinkle with walnuts to serve.
