Lamb and Sprouts Stir-fry

 

Preparation time:           10 minutes

Cooking time:               15 minutes

Serves 4

 

2 tblspn oil

200g lamb stir-fry strips

500g Brussels sprouts, halved

1 clove garlic, crushed

1 red capsicum, sliced

4 flat mushrooms, sliced

4 spring onions, sliced

soy sauce to taste

1/2 cup fresh coriander leaves

Cooked rice or noodles to serve

 

 

 

 

 

 

 

 

 

 

 

Heat 1 tblspn oil in wok.  Stir-fry lamb.  Drain and set aside.

 

Heat remaining oil in wok.  Stir-fry Brussels sprouts, garlic and capsicum 2 minutes.

 

Add mushrooms, spring onions, soy sauce and lamb.  Stir-fry 2 – 3 minutes.  Fold coriander leaves through.

 

Serve with rice or noodles.
