Lemon and Basil Couscous
Side dishes don’t come much easier than this!

Cooking Time: 1 minute
Serves: 4
1 1/2 cups chicken stock
1 1/2 cups couscous
20g butter
1 lemon, grated and juiced
1/2 cup basil leaves, finely chopped
1/3 cup pine nuts, toasted
Pour chicken stock into a medium size saucepan. Bring to the boil over high heat. Remove from heat. Add couscous. Stir and cover. Allow to stand for 5 minutes. Remove lid and stir with a fork to separate grains. Add butter, lemon rind, 2 tablespoons lemon juice, basil and pinenuts. Stir well until combined. Season with salt and pepper.
