Mango and Prosciutto Wraps
Preparation: 8 minutes
Makes 16

300g spreadable cheese
1/2 small mango, peeled, finely chopped
1 tblspn chopped char-grilled capsicum
16 slices baguette, grilled until toasted
8 slices prosciutto
Gently combine the cream cheese, mango and capsicum, without
crushing the
mango.
Spread
the mixture over the toasted bread slices.
Cut each
rasher of prosciutto lengthways into 2 strips. Wrap a strip around each
cream
cheese topped baguette slice.
Hint: The
mango mixture, the toasting of the bread and the slicing of the prosciutto
Can all
be prepared ahead of time. Assemble just before
serving.
