Marinated Vegetable Kebabs

Serves 4
2 zucchini
2 yellow capsicums
24 button mushrooms
1 punnet cherry tomatoes
2 onions, cut into
wedges
Barbecued meats, to serve
Marinade
2 tblspn honey
2 tblspn light soy sauce
2 cloves garlic, crushed
1 tspn olive oil
Cut zucchini and
capsicum into chunky pieces. Thread vegetables onto kebab sticks. Combine
marinade ingredients. Place kebabs in a shallow dish. Cover with marinade. Marinate
for 10 minutes. Drain marinade and reserve. Grill or barbecue kebabs until
golden brown. Brush frequently with reserved marinade. Serve with barbecued
meats if desired.
