Microwaved Lemon Curd
Preparation: 5 minutes
Cooking: 5 minutes
Makes 2 cups
2 eggs
250gm or 1 cup sugar
grated rind and juice of 2 lemons
1 tblspn cornflour
60gm butter

Beat eggs in a large microwave-safe bowl or jug.
Add
sugar. Beat until very creamy.
Add lemon
rind, juice and cornflour. Mix well.
Add
butter.
Microwave on HIGH for 3 minutes. Stir. Microwave on
MEDIUM 2 minutes.
Stir
until smooth.
Cool
slightly. Spoon into sterilised jars. Store in the refrigerator.
