Mini Pizzas

Serves 4

2 Ruby Lou potatoes
3 tblspn tomato paste
100 g ricotta cheese
½ green capsicum, chopped
1 tblspn dried mixed herbs
1 tblspn grated Parmesan cheese
Heat oven to 200°C. Cut potatoes lengthways into 1cm thick slices. Bake on a
greased
tray for 15 minutes. Remove potato from oven and top with tomato paste,
ricotta cheese,
capsicum, herbs and Parmesan cheese. Bake for a further 10
minutes
or until golden brown. Serve immediately with a fresh green salad.
