medium carrots, peeled and sliced diagonally

tblspn honey

tblspn lemon juice
2 tspn
curry paste or powder

tblspn vegetable oil

tblspn brown sugar

tblspn raisins
Coriander
or parsley to serve
Microwave
or steam carrots until almost tender. Combine honey, lemon juice and curry in a
small bowl. Heat oil in a large pan. Add carrot pieces. Sauté for 2 minutes.
Sprinkle with brown sugar, add raisins and cook for 2 minutes. Add honey
mixture and cook until well-coated. Serve sprinkled with coriander or parsley
leaves.
