Mulberry
and Peach Muffins

11/2 cups
wholemeal self raising flour
1/2 cup plain
flour
4 peaches, peeled
and diced
8 mulberries,
halved
1/4 cup canola
oil
1/4 cup brown
sugar
1/4 cup low-fat
milk
2 eggs, beaten
1 peach, sliced
(for decoration)
Preheat the oven to 180ºC. Lightly grease a muffin tray. Sift
flours and nutmeg into a bowl. Add diced peaches and mulberries. In
another bowl, combine the oil, sugar, milk and eggs. Beat well. Add the egg mixture
to the flour and fruit. Mix gently with a metal spoon until just combined.
Spoon into the muffin pan. Decorate muffins with 3 or 4 peach slices. Bake for
20 - 25 minutes or until golden brown. Remove muffins from pan. Cool on a wire
rack. Serve with good- quality natural yoghurt.
