Pacific Style Whiting with Lemon and Coconut

cup plain flour
1/4
cup fresh grated or dessicated coconut

tspn turmeric
1/2
tspn chilli powder
½
lemon, rind grated
1/4
tspn freshly ground black pepper
¼ tspn salt flakes

tspn vegetable oil
500g
whiting fillets
2
eggs, lightly beaten
Combine
flour, coconut, turmeric, chilli powder, lemon rind, black pepper and salt. Dip
whiting in
beaten eggs. Toss into flour mixture. Cook in a
lightly oiled frying pan on a moderate heat until opaque right through. Serve
whiting with chunks of cucumber, baby cos lettuce,
chopped mint and halved grape tomatoes, all dressed with lemon.
