Pork Sausages with Spinach

Serves 4
1 onion, diced
2 Royal Blue potatoes, peeled and diced
1 sweet potato, peeled and diced
1 stick celery, sliced
1 cup corn kernels
1 cup stock
440 g can kidney beans
1 fresh chilli, finely sliced
¼ cup chopped fresh parsley
1 bunch English spinach, washed
8 pork sausages, grilled
Combine onion, potatoes,
celery and corn in a saucepan with stock. Cook gently with the lid on until
vegetables are tender. Add beans, chilli and parsley. Place spinach on serving
plates, with grilled sausages on top. Spoon vegetable mixture
over sausages. Serve immediately.
