6 eggs, lightly beaten
1 cup low-fat grated cheddar cheese
2 tblspn freshly chopped chives
Salt and freshly ground black pepper
1 red onion, thinly sliced
2 cloves garlic, crushed
1 tspn oil
3 Mondial potatoes, thickly sliced and boiled
Extra chives, to garnish
In a bowl, combine eggs, cheese, chives, salt and
pepper. In a heavy pan, fry onion and garlic in oil until softened. Add sliced
potatoes and toss gently. Pour egg mixture over potatoes and cook on very low
heat until slightly set. Place pan under the grill for 2-3 minutes or until the
top is golden brown. Serve garnished with extra chopped chives.
