Potato
Cheese and Herb Croquettes
Preparation: 30 minutes + chilling
Cooking: 20 minutes
Serves 4
3 Ruby Lou potatoes, peeled and diced
3 eggs
3 tblspn milk
200 g chicken mince
1 cup Mozzarella cheese, grated
2 spring onions, finely sliced
2 tblspn fresh sage, finely chopped
Salt and freshly ground black pepper, to taste
1 ½ cups plain flour
1 cup dry breadcrumbs
Vegetable oil, for frying
Green vegetables, to serve
Boil and mash potatoes.
In a bowl, combine mashed potatoes, 2 beaten eggs, 2 tablespoons milk, chicken
mince, mozzarella, spring onion, sage, salt and pepper. Stir well. Chill for 1
hour. Beat together remaining egg and milk in a small bowl.
Set up another two separate bowls, one with flour, one
with breadcrumbs.
Roll mixture into meal or bite-sized
balls. Dip into flour, then egg mixture, then breadcrumbs. Cook in a frying pan
over medium heat for 5 minutes or until golden brown. If croquettes are
browning too quickly, reduce heat to allow time to cook through. Serve with your
favourite sauce and green vegetables.
