Quick and Easy Potato and Pumpkin Curry

Serves 4
1 tblspn olive oil
1 onion, chopped
2 cloves garlic, crushed
2 - 3 tblspn curry powder
2 tblspn tomato paste
4 tomatoes, diced
1 cup potato, diced or gourmets cut in half
1 cup pumpkin, skin removed and diced
2 cups mixed vegetables (for example cauliflower, carrots, peas)
1 1/2 cups water
Salt and pepper to taste
Steamed rice to serve
In a large saucepan, heat oil and saute
onion and garlic until onion is soft. Stir in
curry
powder and tomato paste. Cook for 2 - 3 minutes. Stir in tomatoes,
pumpkin, mixed vegetables, water, salt and pepper. Cook for approximately 30
minutes or until vegetables are cooked. Serve on a bed of freshly steamed rice.
