Roasted Vegetables
Preparation: 10 minutes
Cooking: 1 hour
Serves: 4
8 potatoes, best to use are Royal Blue, Kestrel, Ruby Lou, cut in half
4 pieces, pumpkin
8 carrots, baby or 2 carrots quartered
4 pieces, sweet potato
4 onions, brown
2 parsnips, quartered
salt and pepper
1/4 cup olive oil
Cut vegetables into similar size.
Place
into a large baking dish, paper or foil lined, with a little olive oil.
Season
well. Bake in a 200C oven for 45 to 60 minutes, turning halfway through.
