Vegetables with Couscous

1 gold
sweet potato, cubed

tblspn butter

zucchini, cut into strips
10 snow
peas, trimmed and halved
1 ½
cups stock
2 cups
milk
2 cups
couscous
1 sprig
coriander, chopped
Natural
yoghurt
Lemon
slices
Microwave
sweet potato until just tender. Place butter, sweet potato, zucchini and snow
peas in a baking tray. Cook at 200°C for 10 minutes. Bring stock and milk to
the boil. Add couscous. Cover and stand for 5 minutes. Stir in coriander. Serve
couscous topped with vegetables and yoghurt. Top with lemon slices.
