Salmon Steaks with Ratatouille

clove garlic, crushed

onion, sliced

tomatoes, chopped

large zucchini, sliced

green capsicum, chopped

tblspn tomato paste

tblspn chopped fresh basil

small eggplant, chopped

Juice
of 1 lemon

tblspn grated Parmesan cheese
Heat oil in a non-stick pan. Cook garlic and
onion for 3-5 minutes. Add
tomato,
zucchini, capsicum, tomato paste, basil and eggplant. Cook over low
heat for
approximately 20 minutes, stirring occasionally. Meanwhile, sprinkle
salmon
steaks with lemon juice. Grill or bbq for 3 minutes each side. Stir
