Seafood Platter with Avocado Salsa

Serves 6
Avocado Salsa
2 avocados, diced
1 punnet of cherry tomatoes, chopped
1 red onion, finely diced
2 tblspn olive oil
salt and pepper
Seafood Platter
12 scallops in the half shell
12 cooked prawns
1 small cooked lobster, halved
12 oysters
1 small jar of salmon roe

Place salsa ingredients in a bowl. Season and toss lightly. Place
scallops in a steamer over simmering water.
Steam for 2 minutes. Arrange seafood
ingredients on a large platter. Place teaspoons of salmon roe in the oysters.
Place small bowl containing salsa in the middle and garnish with lime.
