Sesame-Spiked Spinach and Mushrooms
A quick Asian-inspired side
dish to spark up any meal.

cups button mushrooms
2
cups spinach leaves, washed and chopped
2 tablespoons peanut oil
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon sesame oil
1 tablespoon lime juice
1 tblspn sesame seeds, toasted
Heat
the peanut oil in a wok or frying pan on a high heat. Cook mushrooms, tossing
occasionally, for 2-3 minutes until starting to turn golden. Add spinach and
toss for 30 seconds, until starting to wilt. Transfer to a large bowl or
serving platter.
Whisk
sweet soy sauce, sesame oil and lime juice together. Drizzle this mixture over
the spinach and mushrooms and sprinkle with toasted sesame seeds
