Simple Schnitzels With
Savoy Cabbage

Cooking: 15 minutes
Serves: 4
4 chicken schnitzels
1 onion, finely sliced
1 clove garlic, crushed
1/2 savoy
cabbage, finely sliced
Salt, freshly ground
pepper
Olive oil
Mashed potatoes
Lemon wedges, to serve
Heat a non-stick pan. Fry
schnitzels for 5 minutes each side. Place on a baking tray. Place in
a
low heated oven to keep warm. Heat one tablespoon oil in the same non-stick
pan. Gently
sauté
onion for 5 minutes. Add garlic and
cabbage. Cook quickly, turning
frequently until
just
limp. Season with salt and pepper to
taste. Serve schnitzels and cabbage with
mashed
potatoes
and a wedge of lemon.
