Whole Pears Roasted in Garlic
Preparation: 10 minutes
Cooking: 40 minutes
Serves 4
4 pears
4 cloves garlic
1 tspn white pepper
¼ cup olive oil
1 cup chicken stock
2 tblspn white wine vinegar
1 tblspn seeded mustard
6 sprigs fresh thyme
2 tblspn maple syrup
Beef sausages, to serve
Preheat oven to 200ºC.
Peel pears and place in a deep baking tray. In a medium bowl combine garlic,
white pepper, olive oil, chicken stock and white wine vinegar. Stir through
seeded mustard and thyme sprigs. Pour marinade over the pears and roast in
preheated oven for 35 - 40 minutes. Baste occasionally. In the last 10 minutes
of cooking drizzle with maple syrup. Serve with beef sausages and garnish with
thyme sprigs.
