Wok Fried Pork and Mushrooms

Serves 4
1/3 cup char siew sauce
2 tblspn mirin
1 lime, juiced
2 ½ tblspn peanut oil
300 g cup mushrooms, sliced
300 g pork fillet, trimmed and thinly sliced
200 g snow peas, trimmed
1 tblspn water
Steamed rice, to serve
Combine char siew sauce,
mirin, lime juice and 3 teaspoons of peanut oil in a jug and mix well. Place
mushrooms and pork into separate bowls. Pour half the marinade over mushrooms
and remaining marinade over pork. Toss well to coat.
Heat a wok over high heat. Add 1
tablespoon oil and heat until hot. Add the pork and stir-fry for 5 - 6 minutes
or until tender. Remove. Add remaining 3 teaspoons oil and mushrooms to wok and
stir-fry for 1 minute. Add snow peas and water, cover
with a lid and cook for 20 seconds. Add pork and stir-fry for 30 seconds or
until heated through. Serve with steamed rice.
* Char siew sauce is a thick, sweet Asian sauce. Hoi sin sauce is
a suitable replacement.
