Zucchini Slice
Preparation: 10 minutes, plus 10 minutes standing before serving
Cooking: 40 minutes
Serves 4
1 tblspn chopped fresh coriander
1 tblspn chopped fresh basil
Freshly ground black pepper
4 eggs, lightly beaten
1/2 cup olive oil
2 tspn sesame oil
3 cups thinly sliced zucchini (2 small zucchini)
1 small onion, finely chopped
1 clove garlic, crushed
1 cup SR flour
Combine flour, coriander, basil and pepper in a bowl. Add eggs and
oils. Fold through
zucchini, onion and garlic. Spread mixture into a lightly greased loaf tin or 20 cm
round cake tin. Bake at 180C for about 40 minutes or until golden brown and
firm in the centre. Stand for 10 minutes
before turning out of tin. Serve warm or at room temperature with a fresh green
salad and a dressing of sweet chilli sauce, light soy and lime juice.
